Red Pepper Avocado Salad

  1. In a large bowl combine first five ingredients.

  2. Drizzle extravaGONZO Roasted Garlic Oil, and lemon juice and toss to coat well.

  3. Season with salt and pepper to taste.

  4. This recipe works great with any flavor of the extravaGONZO culinary oils!


Tom's Tip

As a holiday meal, be sure to use more red peppers than any other colors. It will look very "love-ly."

  • 1 ripe avocado, diced

  • 1 large red bell pepper, diced

  • 1/2 cup cherry tomatoes, halved

  • 2 green onions, sliced

  • 2 tablespoons fresh minced parsley

  • 1 tbs extravaGONZO Roasted Garlic Oil

  • Juice of one lemon

  • Salt and pepper, to taste
